Melting Cabbage Recipe 🥬

This Melting Cabbage recipe delivers a velvety, tender dish infused with the rich flavors of caraway, cumin, and garlic. The cabbage simmers in a flavorful broth, making it the perfect side dish for roasted pork or chicken.

Ingredients:

  • 1 head green cabbage (about 2 pounds), outermost leaves removed
  • 4 tablespoons extra-virgin olive oil, divided
  • ¾ teaspoon salt, divided
  • ¾ teaspoon ground pepper, divided
  • 1 medium onion, halved and sliced
  • 4 large cloves garlic, sliced
  • 1 teaspoon caraway seeds
  • 1 teaspoon cumin seeds
  • 3 tablespoons tomato paste
  • 2 cups low-sodium chicken or vegetable broth
  • 1 teaspoon dry mustard
  • Chopped parsley, for garnish
  • Whole-grain mustard, for serving

Directions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2. Prepare the Cabbage:

  • Slice the cabbage in half through the root. Cut each half into 4 wedges, keeping the root intact to hold the wedges together.

3. Brown the Cabbage:

  • Heat 1 tablespoon of olive oil in a large cast-iron or heavy ovenproof skillet over medium heat. Add 4 cabbage wedges and cook until browned in spots on both sides, about 3-5 minutes per side. Transfer the browned wedges to a plate and sprinkle both sides with ¼ teaspoon each of salt and pepper. Repeat with another tablespoon of oil and the remaining cabbage wedges, adding another ¼ teaspoon each of salt and pepper.

4. Cook the Aromatics:

  • Add the remaining 2 tablespoons of oil to the pan. Stir in the sliced onion, garlic, caraway seeds, and cumin seeds. Cook, stirring frequently, until the onion starts to soften and brown, about 2-3 minutes. Add the tomato paste and cook, stirring, until it starts to darken, about 2 minutes.

5. Simmer the Cabbage:

  • Add the broth, dry mustard, and the remaining ¼ teaspoon each of salt and pepper to the pan. Increase the heat to medium-high and bring to a boil. Return the cabbage wedges to the pan, overlapping them if necessary.

6. Bake:

  • Transfer the pan to the preheated oven and bake, turning the cabbage wedges once, until the cabbage is very soft and the sauce has reduced and thickened, about 40-45 minutes.

7. Serve:

  • Garnish with chopped parsley and serve with whole-grain mustard, if desired.
