Layered Carrot Cake Recipe

A homemade spiced carrot cake with layers of moist cake and creamy cream cheese frosting. Perfect for any special occasion!

Ingredients:

For the Carrot Cake:

  • 4 cups sugar
  • 2 cups canola oil
  • 8 large eggs
  • 4 cups flour
  • 2 tsp baking soda
  • 2 tsp baking powder
  • ½ tsp salt
  • 4 tsp cinnamon
  • 3 cups shredded carrots
  • 1 cup chopped pecans

For the Cream Cheese Frosting:

  • ½ cup unsalted butter, softened
  • 1 (8 oz) block cream cheese, softened
  • 4 cups powdered sugar
  • 2 tsp pure vanilla extract
  • 1 cup chopped pecans (for garnish)

Instructions:

  1. Prepare Pans:
  • Spray three 9-inch round cake pans with nonstick spray. Set aside.
  1. Mix Cake Batter:
  • In a stand mixer, combine sugar, oil, and eggs until well mixed.
  • In a separate bowl, mix flour, baking soda, baking powder, salt, and cinnamon. Gradually add to the sugar mixture, mixing well.
  • Fold in shredded carrots and 1 cup of pecans.
  • Divide batter evenly among the three pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool completely on a wire rack.
  1. Make Frosting:
  • Beat together butter and cream cheese until smooth.
  • Gradually add powdered sugar and vanilla, mixing until creamy.
  1. Assemble Cake:
  • Level the tops of the cakes and crumble any excess into a bowl.
  • Place the first layer on a cake board. Spread 1 cup of frosting evenly over the layer.
  • Add the second cake layer and repeat with frosting.
  • Top with the third layer and frost the entire cake.
  • Press chopped pecans onto the sides and sprinkle some on top.
