Layered Carrot Cake Recipe

A homemade spiced carrot cake with layers of moist cake and creamy cream cheese frosting. Perfect for any special occasion!
Ingredients:
For the Carrot Cake:
- 4 cups sugar
- 2 cups canola oil
- 8 large eggs
- 4 cups flour
- 2 tsp baking soda
- 2 tsp baking powder
- ½ tsp salt
- 4 tsp cinnamon
- 3 cups shredded carrots
- 1 cup chopped pecans
For the Cream Cheese Frosting:
- ½ cup unsalted butter, softened
- 1 (8 oz) block cream cheese, softened
- 4 cups powdered sugar
- 2 tsp pure vanilla extract
- 1 cup chopped pecans (for garnish)
Instructions:
- Prepare Pans:
- Spray three 9-inch round cake pans with nonstick spray. Set aside.
- Mix Cake Batter:
- In a stand mixer, combine sugar, oil, and eggs until well mixed.
- In a separate bowl, mix flour, baking soda, baking powder, salt, and cinnamon. Gradually add to the sugar mixture, mixing well.
- Fold in shredded carrots and 1 cup of pecans.
- Divide batter evenly among the three pans and bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Cool completely on a wire rack.
- Make Frosting:
- Beat together butter and cream cheese until smooth.
- Gradually add powdered sugar and vanilla, mixing until creamy.
- Assemble Cake:
- Level the tops of the cakes and crumble any excess into a bowl.
- Place the first layer on a cake board. Spread 1 cup of frosting evenly over the layer.
- Add the second cake layer and repeat with frosting.
- Top with the third layer and frost the entire cake.
- Press chopped pecans onto the sides and sprinkle some on top.
