Ingredients:

  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/2 tsp baking powder
  • 2 eggs
  • 1 tbsp sugar
  • 1/4 cup vegetable oil
  • 3/4 cup milk or buttermilk
  • Pinch of salt

Steps to Follow:

  1. Mix Dry Ingredients:
  • In a large bowl, combine the flour, cornmeal, baking powder, and a pinch of salt. Mix well using a fork.
  1. Add Wet Ingredients:
  • Crack the eggs into the bowl, pour in the milk or buttermilk, and mix with an electric mixer until smooth and well combined.
  1. Heat the Pan:
  • Heat the vegetable oil in a frying pan over medium heat. Once hot, drop about 1/3 cup of the batter into the pan to form each hoecake. You can cook about 3 cakes at a time.
