Ingredients:
- 1 cup all-purpose flour
- 1 cup yellow cornmeal
- 1/2 tsp baking powder
- 2 eggs
- 1 tbsp sugar
- 1/4 cup vegetable oil
- 3/4 cup milk or buttermilk
- Pinch of salt
Steps to Follow:
- Mix Dry Ingredients:
- In a large bowl, combine the flour, cornmeal, baking powder, and a pinch of salt. Mix well using a fork.
- Add Wet Ingredients:
- Crack the eggs into the bowl, pour in the milk or buttermilk, and mix with an electric mixer until smooth and well combined.
- Heat the Pan:
- Heat the vegetable oil in a frying pan over medium heat. Once hot, drop about 1/3 cup of the batter into the pan to form each hoecake. You can cook about 3 cakes at a time.
- Cook the Cakes:
- When the cakes start bubbling on top, flip them over and cook until they are golden brown on both sides.
- Serve and Enjoy:
- Remove the cakes from the pan and serve hot with maple syrup, honey, or butter. They taste best fresh off the stove!
