Fried Cabbage with Bacon

Ingredients:
– 4 ounces (about 5 thick-cut strips) of bacon
– 1 small white or sweet onion, finely diced
– 1 large head of cabbage (2.5 to 3 pounds), shredded (about 10 cups)
– 2 cloves of garlic, finely minced
– 2 tablespoons butter
– ¾ to 1 teaspoon salt
– ¼ teaspoon black pepper
Instructions:
1. Cut bacon into bite-sized pieces and cook in a large skillet over medium heat until crispy (7-8 minutes). Remove with a slotted spoon and drain on a paper towel. Leave the bacon grease in the skillet.
2. Dice and sauté the onion in the skillet with the bacon grease for 2-3 minutes.
3. Add minced garlic and butter to the skillet, cooking for 30 seconds until fragrant.
4. Add half of the shredded cabbage to the skillet, stirring to combine with the onions and garlic. Cook for 2-3 minutes until it starts to wilt.
5. Add the remaining cabbage, season with salt and pepper, and mix well. Continue to cook for 10-12 minutes, stirring occasionally. For caramelized edges, increase the heat to medium-high for the last few minutes.
6. Stir the crispy bacon back into the skillet and heat for 1-2 minutes.
7. Serve immediately and adjust seasoning as needed.
