Delicious Pecan Pie Bars Recipe 🥧✨

Ingredients:

For the Crust:

  • 2 and 1/3 cups all-purpose flour
  • 1/2 cup light brown sugar, packed
  • 1.5 teaspoons cornstarch
  • 3/4 teaspoon salt
  • 1 cup unsalted butter, cold
  • 2 tablespoons heavy cream

For the Filling:

  • 1/4 cup unsalted butter
  • 1 cup light brown sugar, packed
  • 3 tablespoons all-purpose flour
  • 3 large eggs, room temperature
  • 1 cup light corn syrup
  • 1.5 teaspoons vanilla extract
  • 3/4 teaspoon salt
  • 2.5 cups chopped pecans

Instructions:

  1. Preheat Oven: Set to 350°F (175°C). Line a 9×13 inch baking dish with parchment paper or foil, leaving an overhang for easy removal later.
  2. Prepare the Crust: In a food processor, combine the flour, brown sugar, cornstarch, and salt. Pulse briefly to mix.
  3. Add Butter: Cut the cold butter into small pieces and scatter it over the flour mixture. Pulse until the butter is incorporated and pea-sized pieces remain.
  4. Add Cream: Pour in the heavy cream and pulse until the dough is sandy but clumps together when pressed.
  5. Press into Pan: Transfer the mixture to the prepared baking pan, pressing it into an even layer with the back of a spoon.
  6. Bake Crust: Bake for about 25 minutes, or until light golden brown. Prepare the filling while the crust bakes.
  7. Make Filling: Melt the butter and let it cool. In a large bowl, whisk together the brown sugar and flour until smooth.
  8. Add Eggs and Syrup: Add the eggs, corn syrup, vanilla extract, and salt. Stir until combined.
  9. Incorporate Butter: Gradually drizzle in the cooled melted butter, stirring until fully mixed.
  10. Add Pecans: Stir in the chopped pecans until evenly distributed.
  11. Combine Filling and Crust: Once the crust is baked, pour the pecan filling over it, spreading it evenly.
  12. Bake Again: Return to the oven and bake for an additional 25-30 minutes, until the filling is set.
  13. Cool Completely: Allow to cool completely, ideally for 4-6 hours or overnight.
  14. Slice and Serve: Use the parchment or foil to lift the bars from the pan. Cut into squares and enjoy!
