Buttermilk Fried Chicken Burger 🍔✨

Ingredients:
For the chicken:
- 600g chicken breast, halved horizontally
- 1 ½ cups plain flour
- 1 tsp Cajun seasoning
- 1 tbsp ground black pepper
- ½ tsp sea salt
- 1 cup (250ml) buttermilk
- 2 eggs, lightly beaten
For the spicy mayo:
- 1 garlic clove, crushed
- ⅓ cup whole egg mayonnaise
- 1 tsp Tabasco sauce
For the slaw:
- ½ small red onion, thinly sliced
- 1 long green chili, seeded and thinly sliced
- ¼ red cabbage, finely shredded
- ¼ green cabbage, finely shredded
- 1 small carrot, coarsely grated
- Juice and zest of 1 lime
For assembly:
- Vegetable or canola oil, for frying
- 4 brioche rolls, split
- 1 baby cos lettuce, leaves separated
- 4 dill pickles, thinly sliced
- Shoestring fries, to serve
Directions:
- In a shallow bowl, whisk together flour, Cajun seasoning, pepper, and salt. In another bowl, mix buttermilk and eggs. Coat each chicken piece in the flour mixture, dip in the buttermilk mixture, and coat again in flour. Set aside on a plate lined with baking paper.
- Prepare the spicy mayo by mixing garlic, mayonnaise, and Tabasco in a small bowl. For the slaw, combine onion, chili, cabbages, carrot, lime juice, and zest in another bowl.
- Heat 1 ½ cm of oil in a large frying pan over medium heat. Test the oil with a small piece of bread; if it bubbles and turns golden, it’s ready. Fry chicken in batches for 4-5 minutes per side until golden and cooked through. Transfer to a wire rack over a baking tray and season lightly with extra salt.
- Spread spicy mayo on the brioche rolls. Layer with lettuce, pickles, slaw, and crispy fried chicken. Top with the bun and serve with a side of fries.
