Alfredo Chicken Lasagna Recipe
Ingredients:
- 1 rotisserie chicken, meat removed and chopped (about 3 cups)
- 8 oz ricotta cheese (1 cup)
- 2 tbsp heavy cream
- 1 jar (15 oz) Alfredo sauce
- 5 oz frozen spinach, thawed and drained
- 2 tsp Italian seasoning
- 1 cup shredded provolone cheese
- 1 cup shredded mozzarella cheese
- Chopped fresh parsley for garnish
- Salt and pepper to taste
Instructions:
- Preheat the oven to 350°F (180°C).
- In a medium bowl, mix together the chopped rotisserie chicken, ricotta cheese, and heavy cream. Season with salt and pepper to taste.
- Spread a thin layer of Alfredo sauce on the bottom of a 9×13-inch baking dish. Top with half of the frozen spinach.
- Layer half of the chicken filling evenly over the spinach.
- Sprinkle half of the provolone and mozzarella cheeses over the chicken layer.
- Repeat the layers with the remaining Alfredo sauce, spinach, chicken filling, and shredded cheeses.
- Cover the dish tightly with foil and bake for 30 minutes. Remove the foil and bake for another 10 minutes or until the cheese is bubbly and lightly browned.
- Let the lasagna cool for 5-10 minutes before cutting into squares. Garnish with chopped fresh parsley.
