Alfredo Chicken Lasagna Recipe

Ingredients:

  • 1 rotisserie chicken, meat removed and chopped (about 3 cups)
  • 8 oz ricotta cheese (1 cup)
  • 2 tbsp heavy cream
  • 1 jar (15 oz) Alfredo sauce
  • 5 oz frozen spinach, thawed and drained
  • 2 tsp Italian seasoning
  • 1 cup shredded provolone cheese
  • 1 cup shredded mozzarella cheese
  • Chopped fresh parsley for garnish
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 350°F (180°C).
  2. In a medium bowl, mix together the chopped rotisserie chicken, ricotta cheese, and heavy cream. Season with salt and pepper to taste.
  3. Spread a thin layer of Alfredo sauce on the bottom of a 9×13-inch baking dish. Top with half of the frozen spinach.
  4. Layer half of the chicken filling evenly over the spinach.
  5. Sprinkle half of the provolone and mozzarella cheeses over the chicken layer.
  6. Repeat the layers with the remaining Alfredo sauce, spinach, chicken filling, and shredded cheeses.
  7. Cover the dish tightly with foil and bake for 30 minutes. Remove the foil and bake for another 10 minutes or until the cheese is bubbly and lightly browned.
  8. Let the lasagna cool for 5-10 minutes before cutting into squares. Garnish with chopped fresh parsley.
