Rich Chocolate Fudge Cake Recipe
Indulge in a luscious chocolate fudge cake that’s both easy to make and incredibly delicious! 🍫✨
Ingredients:
For the Cake Layer:
- 1 box chocolate cake mix (or use your favorite homemade chocolate cake recipe)
For the Coconut Topping:
- 1 cup milk
- 1 cup white sugar
- 12 oz (340g) flaked coconut
- 120 mini marshmallows (or 12 large marshmallows)
- 1 tsp vanilla extract
- 1/2 cup chopped pecans
For the Chocolate Fudge Topping:
- 1/2 cup (1 stick) margarine
- 2 cups white sugar
- 2 tbsp cocoa powder
- 1 can (12 oz) evaporated milk
- 1 tsp vanilla extract
Directions:
- Prepare the Cake:
- Follow the package instructions to prepare the cake batter.
- Pour the batter into a greased 9×13 inch pan.
- Bake at 350°F (177°C) for 30-40 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool completely.
- Make the Coconut Topping:
- In a saucepan, bring 1 cup milk and 1 cup sugar to a boil.
- Stir in the flaked coconut and marshmallows.
- Cook for 5 minutes, stirring frequently.
- Remove from heat and add vanilla extract and chopped pecans.
- Prepare the Chocolate Fudge Topping:
- In another saucepan, melt the margarine over medium heat.
- Whisk in the sugar, cocoa powder, and evaporated milk.
- Cook for 5 minutes, stirring constantly, until the mixture thickens.
- Remove from heat and stir in the vanilla extract.
- Assemble the Cake:
- Once the cake has cooled, poke holes all over the surface with a fork.
- Spread half of the coconut topping over the cake.
- Follow with half of the chocolate fudge topping.
- Repeat with the remaining coconut topping and chocolate fudge topping.
- Chill and Serve:
- Refrigerate the cake for at least 2 hours before serving to allow the toppings to set.
- Store leftovers in the refrigerator.
