Spicy Skillet Potatoes and Smoked Sausage

Get ready for a flavor explosion with these Spicy Skillet Potatoes and Smoked Sausage! Crispy on the outside, tender on the inside, and packed with bold Cajun spices—this dish is perfect for any meal. 🌶️🔥

Ingredients:

  • 5 medium russet potatoes, sliced into 1/4 inch thick rounds (about 3 pounds)
  • 1/2 green bell pepper, diced
  • 1 jalapeño pepper, seeds removed and diced (optional)
  • 1/2 yellow onion, diced
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 2 teaspoons Badia complete seasoning (sazon)
  • 1/4 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 2 tablespoons bacon grease
  • 1 tablespoon dried parsley flakes
  • 2-3 tablespoons canola oil
  • 8 ounces beef smoked sausage, sliced
  • 2-3 tablespoons unsalted butter

Directions:

  1. Prepare the Potatoes:
  • Wash the potatoes well and slice them into 1/4 inch rounds. Pat dry with paper towels.
  1. Dice and Slice:
  • Dice the bell pepper, jalapeño (if using), and onion. Slice the smoked sausage.
  1. Heat the Skillet:
  • Add 2-3 tablespoons of canola oil to a large cast iron skillet and heat on medium-high.
  1. Cook the Potatoes:
  • Add the sliced potatoes to the hot oil and toss to coat. Sprinkle with Cajun seasoning, garlic powder, onion powder, black pepper, Sazon, cayenne pepper, and paprika. Toss again to evenly coat the potatoes.
  1. Butter It Up:
  • Add 2 tablespoons of butter and stir until melted and the potatoes are fully coated.
  1. Cook Covered:
  • Cover the skillet and cook for 8-10 minutes, stirring occasionally, until the potatoes are fork-tender.
  1. Sauté Veggies:
  • Move the potatoes to one side of the skillet. Add 2 tablespoons of bacon grease to the empty side. Sauté the bell pepper, jalapeño, and onion for 1 minute.
  1. Add Sausage:
  • Add the sliced sausage and sauté for 1 minute more.
  1. Combine and Season:
  • Mix the veggie-sausage mixture into the potatoes. Season with more Sazon, parsley flakes, and a pinch of cayenne and sea salt. Gently combine everything.
  1. Deglaze the Pan:
    • Add a splash of water to deglaze the skillet, getting all the browned bits off the bottom. Cover and cook for 2-3 more minutes.
  2. Serve Hot:
    • Remove from heat and serve hot. Enjoy the perfect blend of spicy, savory flavors!
